Ingredients

  • 800 g (1 lb 12 oz) broccoli florets (no stems)
  • 150 g (5 oz) bacon, diced
  • 2 garlic cloves, minced
  • 75 g + 2 tbsp (5 tbsp + 2 tbsp) butter
  • 2 tbsp (2 tbsp) cooking oil
  • 1 dl (⅖ cup) all-purpose flour
  • 7 dl (3 cups) full-fat milk
  • 200 g (7 oz) cheese, grated
  • Black pepper, to taste
  • Salt, to taste

Instructions

  1. Add the cooking oil and 2 tablespoons of butter to a regular frying pan or a deeper oven-safe sauté pan.
  2. Sauté the broccoli florets until they begin to develop some color. If you’re not using an oven-safe pan, transfer the broccoli to an oven dish.
  3. Fry the diced bacon until it starts to brown slightly. Add the minced garlic and continue cooking for another minute.
  4. Add the bacon and garlic mixture to the broccoli.
  5. In a separate pan or pot, melt 75 grams (5 tablespoons) of butter. Add the flour and stir or whisk to combine, making sure there are no lumps.
  6. Gradually pour in the milk, stirring or whisking constantly until the sauce thickens.
  7. Season the sauce with salt and black pepper. Add the grated cheese and stir until fully melted and smooth.
  8. Pour the cheese sauce evenly over the broccoli and bacon.
  9. Bake in the oven at 180°C (360°F) for around 20 minutes.
  10. Serve hot with bread, pasta, or enjoy it as is.
