Make perfect roast chicken with just five ingredients. Juicy meat, crispy skin, and rich flavor using a simple dry brine method.

Ingredients

Scale
  • 1 whole chicken
  • 5 tbsp olive oil
  • 3 tbsp melted butter
  • Black pepper, to taste
  • Salt, to taste

To Serve

  • Roast potatoes
  • Salad

Instructions

  1. Season the chicken with salt and black pepper on all sides. Let it sit in the fridge uncovered for two hours.
  2. Using a knife, poke a few holes in the back of the chicken to allow liquids to escape while searing.
  3. In an oven-safe frying pan, heat the olive oil.
  4. Place the chicken in the pan, back side down, and sear until golden brown on that side.
  5. Baste the chicken with the melted butter.
  6. Roast in the oven at 225°C (435°F) for 1 hour, or until fully cooked through.
  7. Serve with roast potatoes, salad, or your preferred side dishes.
