- 1 whole chicken
- 5 tbsp olive oil
- 3 tbsp melted butter
- Black pepper, to taste
- Salt, to taste

Instructions
- Season the chicken with salt and black pepper on all sides. Let it sit in the fridge uncovered for two hours.
- Using a knife, poke a few holes in the back of the chicken to allow liquids to escape while searing.
- In an oven-safe frying pan, heat the olive oil.
- Place the chicken in the pan, back side down, and sear until golden brown on that side.
- Baste the chicken with the melted butter.
- Roast in the oven at 225°C (435°F) for 1 hour, or until fully cooked through.
- Serve with roast potatoes, salad, or your preferred side dishes.
- Prep Time: 10 minutes (plus 2 hour brining)
