Ingredients

Miso White Bean Purée

Sautéed Mushrooms & Spinach

Seared Tuna

Method

Miso White Bean Purée

  1. Heat the cooking oil and 1 tablespoon of butter in a frying pan over medium heat. Add the shallot and sauté until softened. Add the garlic and cook for another minute, stirring occasionally.
  2. Add the white beans and the remaining tablespoon of butter. Stir well and cook until the butter has melted and the beans are heated through.
  3. Stir in the miso paste and half of the lemon juice. Season with salt and black pepper.
  4. Transfer everything to a food processor and blend until smooth and creamy.
  5. Add the remaining lemon juice to taste. If the purée is too thick, add a little water or olive oil until you reach your desired consistency.
  6. Taste and adjust the seasoning if needed. Set aside and keep warm.

Sautéed Mushrooms & Spinach

  1. Heat the olive oil and butter in a frying pan over medium heat. Add the shallot and sauté until softened.
  2. Add the mushrooms and cook, stirring occasionally, until they release their moisture, the liquid evaporates, and the mushrooms turn golden brown.
  3. Add the baby spinach and cook for another 1–2 minutes, until just wilted.
  4. Season with salt and black pepper. Set aside and keep warm.

Seared Tuna

  1. Pat the tuna steaks dry with paper towels. Rub them with the cooking oil and season both sides with salt and black pepper.
  2. Heat a frying pan or griddle over medium-high to high heat. Once hot, add the tuna steaks and sear for approximately 2 minutes on each side, depending on their thickness and your preferred doneness. Cook longer if you prefer your tuna fully cooked.
  3. Spoon the white bean purée onto serving plates, add the sautéed mushrooms and spinach, and place the tuna on top or alongside.
  4. Serve with lemon wedges for squeezing over the tuna. Enjoy!
